The above sentence is a quote by French pastry chef Aurélien Cohen from the foreword of his recipe collection, published in January 2023. In his cookbook, he shares the experience and knowledge he has gained over the years. The pastry chef's career differs from that of his famous colleagues because he became a pastry chef relatively late, when he was 25 years old, after completing his marketing studies. His first professional success was as head pastry chef at the restaurant and pastry shop Ô Gourmandises d'Ange, followed by the Crior gastronomic house, where he worked for many years. Aurelien Cohen's hugely successful pastry shop opened in a suburb of Paris (Asnières-sur-Seine) in 2021. He and his work have a vast international fan base on social media such as Instagram with 256k followers and TikTok. He regularly holds workshops and courses. According to the French professional, his desserts are characterised by precision, sophisticated flavours and exciting variations in textures. "By fine-tuning different textures, we can create modern and original cakes. Crunchy layers, creams, fillings... each one like a note on a musical score," - which the pastry chef assembles with the right intensity and sequence. He will prepare refreshed, new versions of the most popular recipes in his masterclass in Budapest.
